Cin in Cin City was born from two obsessions — the art of laminated pastry and the extraordinary complexity of cinnamon. Not the supermarket kind. The real kind. Four varieties. Four countries. Four completely different flavour stories.

We are a Melbourne-based wholesale viennoiserie house with Sri Lankan roots, producing colourful, rare and deeply considered pastries that you won't find anywhere else in this city.

Every item we make is a deliberate choice. Natural colours. Premium ingredients. Techniques borrowed from the finest patisseries in the world — and a brand identity that dares to call itself what it is.

Laminated Croissant — black cocoa & charcoal dough, vanilla crème filling

Jet-black laminated dough. Madagascan vanilla crème. The contrast on the cut is the moment.

Ruby Rose

Danish — laminated dough, open-faced, rose crème & raspberry glaze

Deep ruby red raspberry glaze. Rose crème. A single dried rose petal. Deliberately brand-aligned.

Pistachio Gold Spiral

Laminated Spiral — layered dough, pistachio frangipane, gold finish

Pistachio frangipane. Emerald green glaze. Antique gold dust. Green and gold — intentional.

Yuzu Lemon Halo

Danish — laminated dough, open-faced, yuzu curd filling

Matcha Strawberry Split

Vivid emerald green from fresh pandan leaf. Coconut cream filling. Pandan is Sri Lanka's vanilla — and this is ours.

Kithul Treacle

Cinnamon Scroll — enriched dough, kithul treacle filling, dark amber glaze

Kithul treacle from the Sri Lankan kithul palm. Richer and more complex than molasses. An ingredient that exists nowhere else.

Cardamom & Rose

Danish — laminated dough, open-faced, cardamom crème, rose glaze

Fresh-ground green cardamom crème. Rose glaze. A single dried rose petal. Sri Lankan spice heritage in a French format.

Seeni Sambol

Ceylon cinnamon — true cinnamon — is native to Sri Lanka. It is delicate, floral and complex. It is the most prized cinnamon in the world. And it is ours.

The Ceylon Series is our most personal statement. Sri Lankan ingredients — pandan, kithul treacle, cardamom, seeni sambol — expressed through the precision of French laminated pastry. No other viennoiserie house in Australia does this.

It is not fusion. It is identity.

Pandan & Coconut

Pandan is the vanilla of Sri Lanka. We put it in our dough.

Kithul Treacle

Cinnamon Scroll — enriched dough, kithul treacle filling, dark amber glaze

Kithul treacle exists only in Sri Lanka. This scroll exists only at Cin in Cin City.
